The parboiling process — soaking, steaming, and drying paddy before milling — gelatinises the starch, strengthens the kernel, and drives nutrients from the bran layer into the endosperm. The result is parboiled rice with improved nutritional value, significantly reduced milling breakage, longer shelf life, and superior texture and colour.
